1. Simple croquettes made from plantains

ingredients

  • 3 eggs
  • 1 ripe plantain (30 g)
  • Vegetable oil (to taste)
  • Salt (as little as possible)
  • 1 packet of breadcrumbs (200 g)

  • Peel and cook the plantain until tender.
  • Then mash with a fork until a paste forms and add an egg and salt
  • Shape the dough into small balls.
  • Scatter the breadcrumbs on a plate.
  • Beat the other two eggs with a pinch of salt.
  • Roll the balls in the beaten eggs and then in the breadcrumbs.
  • Finally, fry in hot oil and place on kitchen paper, which will absorb the excess oil.

2. Cheese croquettes made from plantains

  • 1 egg
  • 1 ripe plantain (40 g)
  • Grated cheese (to taste)
  • 1 shallot (20 g)
  • 1 tablespoon butter (20 g)
  • Salt, cumin and vegetable oil (to taste)
  • 1 packet of breadcrumbs (200 g)

  • Peel and slice the plantain. Cook until tender.
  • Mash with a fork and make a homogeneous paste with the egg, a few breadcrumbs and salt.
  • Chop the shallot and fry in the butter. Season with salt and a pinch of caraway seeds.
  • Remove from heat and add the grated cheese. Put aside.
  • Shape small balls with the plantain mixture, flatten and add some of the shallot and cheese mixture. Then close it and shape it back into balls.
  • Fry until golden brown in hot oil.

3. Plantain croquettes with green olives

ingredients

  • 2 eggs
  • some Milk
  • 2 ripe plantains (80 g)
  • 6 cups of chicken broth
  • 1/2 cup of grated cheese (50 g)
  • 2 cups of flour (200 g)
  • 1 packet of breadcrumbs (200 g)
  • 3 tablespoons butter (30 g)
  • Chopped green olives (to taste)

  • Peel the bananas and cut them into large pieces.
  • Cook in the broken chicken until tender and golden.
  • Mash with a fork, add the butter and salt, and stir until everything is well mixed.
  • Shape into small balls and fill with the olives and cheese.
  • Sprinkle the flour on one plate and have the breadcrumbs ready on another. In a third plate, mix the beaten eggs with a little milk and salt.
  • First roll each ball in the flour, then in the egg and finally in the breadcrumbs.
  • Fry in hot oil.

4. Plantain croquettes with tomatoes and onions

ingredients

  • 1 egg
  • 2 tomatoes (60 g)
  • 1 onion (30 g)
  • 1 clove of garlic
  • 2 ripe plantains (80 g)
  • Salt and vegetable oil (to taste)
  • 1 packet of breadcrumbs (200 g)

  • Peel the plantains, then cut them into pieces and cook.
  • Once soft, mash with a fork.
  • Chop the onion and garlic.
  • Core and dice the tomatoes.
  • Heat the oil in a pan and sauté the onion, garlic and tomato for a few minutes. Add salt.
  • Stir in the pureed plantain.
  • Let rest in the refrigerator for at least 15 minutes (longer if possible) and then shape into small balls.
  • Fry in hot oil.
