Before you start preparing the fish balls, you should make the green sauce. You achieve the taste contrast with the finely chopped mixture of different ingredients and high quality olive oil.

  • 2 spring onions
  • ½ cup white wine (125 ml)
  • 1 cup vegetable stock (250 ml)
  • 2 pinches of ground black pepper
  • 2 tablespoons of extra virgin olive oil (30 ml)
  • 1 tablespoon of finely chopped parsley (15 g)

preparation

  1. Heat the olive oil in a pan.
  2. Then add the finely chopped green onions.
  3. Then season with a pinch of salt and stir with a wooden spoon.
  4. As soon as the onion is translucent, add the white wine and simmer until the alcohol has evaporated.
  5. Then add the chopped parsley.
  6. Then pour the vegetable stock into the pan and simmer for about 10 minutes until the sauce reduces.

Ingredients for the fish balls with prawns

  • 2 boneless hake fillets (approx. 375 g)
  • 10 fresh prawns (about 250 g)
  • 1 egg yolk
  • Zest of a lemon
  • 2 tablespoons of chopped parsley (30 g)
  • 2 tablespoons chickpea flour (30 g)
  • 1 tablespoon of ground fennel (15 g)
  • 2 teaspoons of garlic powder (10 g)
  • 1 pinch of ground caraway seeds

Preparation of the fish balls with prawns

  1. Clean the fish fillets well and remove any skin and bones, if any.
  2. Then use a food processor to shrink the fish.
  3. Then add the peeled prawns to process them as well.
  4. Then add the lemon zest, garlic, salt and pepper.
  5. Then add the chopped parsley, caraway seeds and fennel.
  6. Now only the egg yolks and the chickpea flour are missing. Mix everything well until you get a uniform mass.
  7. It is important that the mass is malleable  so that you can easily make the fish balls with your hands.
  8. Roll the finished fish balls in chickpea flour.
  9. Then you put olive oil in a pan and let the fish balls fry in it until they are golden brown.
  10. If you prefer, you can also bake the fish balls in the oven so that they contain less oil. At 170ºC they take about 20 minutes to cook in the oven.
