  • Wash the pineapple well, then peel it.
  • Cut the pineapple peel into small pieces and boil it in about a liter of water (for a medium or large pineapple)
  • Then let the mixture cook over a low flame for about 15 or 20 minutes (preferably in a covered saucepan).
  • Then let it sit for another five minutes.

    First, you need a large pineapple or two small, in any case ripe, fruit. Wash and peel them well. Cut the bowl into small pieces and place them in an airtight glass or ceramic container.

    Fill this with two liters of water, 500 g of brown sugar, cane sugar or honey. Then close the container and  let the drink ferment in a warm place for 48 hours. 

    Strain the drink after two days so that there is no residue. Add another liter of water and let it steep for another 12 hours.

    After this time, dilute the drink with 3/4 liters of water and it is ready. Before serving, we recommend chilling the drink appropriately in the refrigerator, where it is generally easy to store.

    During the fermentation process , the drink creates microbiotic probiotics, which over time can even turn it into an alcoholic drink and then into vinegar. 

    You can also give the drink your own personal taste by adding  some orange or grapefruit peel, a sprig of cinnamon or clove spice.

    It is very important that the pineapple has not been treated with pesticides and there are two reasons:
