1. Vegan hamburgers with quinoa

Quinoa is rich in vegetable proteins, vitamins (B, C and E) and essential minerals (such as iron, calcium, etc.). This recipe is easy to make and a great way to add more plant-based foods to your diet that kids will enjoy too.

  • 200 g quinoa
  • 100 g carrots
  • 70 g of oatmeal
  • 30 ml of plant-based milk
  • 1 onion
  • 1 leek
  • garlic
  • breadcrumbs
  • extra virgin olive oil
  • Parsley, thyme and oregano
  • salt and pepper

Vegan hamburgers with quinoa are low in calories and provide health-promoting nutrients. You can enjoy them at any time of the day.

preparation

  • Wash the quinoa grains and boil them in water for about 20 minutes.
  • Then pour them through a sieve to remove any  remaining water. Set the quinoa aside for now.
  • Peel the onion and garlic and wash the leeks. Cut everything into fine strips.
  • Then process  the vegetables well in the stand mixer or blender.
  • You can cook it beforehand if you wish, but this is not absolutely necessary and just takes more time.
  • Then add the plant-based milk, the cooked quinoa, the oatmeal and the salt (if you like) and stir everything well. 
  • Then peel, wash and grate the carrots and add them to this mixture.
  • Then add the breadcrumbs to give the mixture the right consistency. Add enough so that you can shape the hamburgers well.
  • Now shape the hamburgers into the size you want.
  • Then keep everything in the refrigerator for about two hours so that the hamburgers don’t lose their shape while frying.
  • You can fry the hamburgers either in the oven or in a pan with oil.
  • If you choose to use the pan, add a generous amount of oil and wait until it is hot before frying the hamburgers in it. Place the finished hamburgers on paper towels to remove any remaining fat. 
  • If you prefer the oven, place the hamburgers on a baking sheet with baking paper and leave them in the oven for about 10 minutes at a temperature of 180ºC (top and bottom heat). Then they are ready to serve.

2. Vegan hamburgers with rice

All you need for this recipe is simple ingredients, most of which you probably already have at home. So if you don’t know what to cook, this recipe can be very helpful even at the last minute. For the sake of your health, do without ready-made meals and prepare healthy dishes fresh!

  • 80 g whole grain rice
  • 100 g carrots
  • 2 cloves of garlic
  • 1 onion
  • 1 red pepper
  • Cornstarch
  • breadcrumbs
  • extra virgin olive oil
  • salt and pepper

You probably already have the ingredients for this recipe at home. It is therefore helpful if you need an idea at the last minute.

preparation

  • First peel and cut the onions, carrots, and garlic. Put everything in a pan with a little oil and let the vegetables sear for about 15 minutes.
  • Then add the sliced ​​bell pepper (you can also peel it if you like). 
  • You cook the rice beforehand and now add it to the pan. Mix everything well so that all tastes mix well.
  • As soon as the mixture is a little cooler, you can shape hamburgers. Then roll them in cornstarch or breadcrumbs, whichever you prefer.
  • If you choose cornstarch, we recommend frying the hamburgers in the pan.
  • Add plenty of oil to the pan, heat it up, and fry the hamburgers. Then place them on paper towels to remove the excess oil.

You can use whole wheat or grain bread to finish the hamburgers. Add a slice of tomato, some vegan mayonnaise, pesto, mustard, vegan cheese, mushrooms, or any other ingredient you like.

If you prefer to eat the hamburgers without bread, we recommend serving them with rocket, tomatoes and a mustard sauce or vinaigrette. A perfect lunch or dinner! If you wish, you can prepare a vegetable cream soup (for example from pumpkin, zucchini or spinach) as a starter. You can simply serve fruit as a dessert. In this way you supply your organism with all the important vital substances it needs.
